COMBINE milk, oats, dried cranberries, sugar, cinnamon, and salt in a medium saucepan and bring to a boil. Reduce the heat and simmer for 3 minutes, stirring occasionally.
REMOVE the pot from the stove and allow the milk to cool slightly. Mix in the chia seeds and vanilla and allow the mixture to sit for 15 minutes. The chia seeds will absorb most of the milk and become tapioca-like in consistency. Stir in the cooked red lentils.
SEASON the porridge with additional cinnamon and/or sugar as desired. Serve the porridge with goji berries, toasted almonds, and fresh blueberries. Enjoy warm or cold.
