Turmeric Basil Roasted Turkey Burger

Serves 2


burger buns with sesame or poppy seeds, cut in half
125 ml watercress ½ cup
  For the avocado mash  
avocado, peeled and seeded
  The juice of half a lemon  
  Salt to taste  
  For the turkey patties  
30 ml olive oil 2 tbsp
500 ml chopped roasted turkey 2 cups
125 ml breadcrumbs ½ cup
30 ml chopped fresh basil 2 tbsp
1 ml turmeric ¼ tsp
  Salt and pepper, to taste  
  For the red cabbage salad  
175 ml red cabbage, thinly sliced ¾ cup
60 ml pomegranate seeds ¼ cup
green onion, thinly sliced
30 ml red wine vinegar 2 tbsp
15 ml olive oil 1 tbsp
10 ml sugar 2 tsp


Step 1
In a small bowl, mash the avocado using a fork, mix it with the lemon juice and season it with salt. Set it aside.

Step 2
For the turkey patties, combine all the ingredients in a bowl, except the olive oil. Separate the mixture into two equal parts and form two patties. Set it aside.

Step 3
In another bowl, mix all the ingredients of the cabbage salad and season them well. Set it aside.

Step 4
Heat the olive oil and brown the patties (5 minutes per side) on a non-stick skillet over medium heat.

Step 5
In the same pan, brown the inside of the buns.

Step 6
Garnish the base of each bread with mashed avocado, a turkey patty, coleslaw and watercress, then close it with the remaining bread.
