Spinach and Shrimp Risotto

The Arborio rice and milk combine for a lovely, creamy result!

Ingredients

2 tsp butter 10 mL
garlic cloves, minced
onion, chopped
1 cup Arborio rice 250 mL
2 cups no-salt-added chicken broth 500 mL
2 cups divided milk 500 mL
1/4 tsp pepper 1 mL
  A pinch of salt  
12 oz medium raw shrimp peeled, deveined 375 g
1/2 pkg baby spinach 142 g
2 tbsp lemon juice 30 mL
2 tbsp chopped fresh dill or basil 30 mL

Instructions

Step 1
In pot, melt butter over medium heat. Sauté garlic and onion until soft. Add rice; sauté for 1 minute. Stir in broth, 1½ cups milk, salt and pepper; bring almost to boil, stirring.

Step 2
Cover, reduce heat to low, simmer, stirring twice, until rice is almost tender, 20 minutes. Stir in shrimp; cover, simmer for 5 minutes. Stir in remaining milk, then spinach, lemon juice and dill.
