Chickpea Garden Green Salad

Makes 4 servings

Chickpeas, also called garbanzo beans, are creamy yellow beans with a nutlike taste that goes well with crisp vegetables. You’ll find them dried and in cans at the supermarket.

Ingredients

2 cups shredded lettuce 500 ml
1 1/4 cup rinsed drained canned or cooked chickpeas 300 ml
1/2 cup sliced celery 125 ml
1/4 cup chopped green bell pepper 60 ml
1/4 cup chopped sweet onion, such as Spanish, Vidalia or other mild onion 60 ml
2 tbsp chopped fresh parsley 30 ml
2 tbsp freshly squeezed lemon juice 30 ml
2 tsp vegetable oil 10 ml
1 pinch garlic powder 1 pinch
1 pinch freshly ground black pepper 1 pinch
1/8 tsp salt (or less) 0.5 ml

Instructions

Step 1
In a salad bowl, combine lettuce, chickpeas, celery, green pepper and onion.

Step 2
In a small bowl, whisk together parsley, lemon juice, oil and garlic powder. Pour over salad and toss to coat. Season to taste with pepper and up to 1/8 tsp (0.5 ml) salt.

Tips

You can also shake the dressing ingredients together in a small jar.
