Salmon Oasis

Makes 4 servings

This tasty combination of English muffins and salmon with a hint of zest makes a satisfying and delicious lunch.

Ingredients

whole-wheat English muffins
can (71⁄2 oz/213 g) salmon, drained
1/4 cup light mayonnaise 50 mL
2 tbsp finely chopped green onion 25 mL
2 tsp lemon juice 10 mL
1/2 tsp curry powder 2 mL
1/4 tsp black pepper 1 mL
green bell pepper strips
3/4 cup shredded part-skim mozzarella cheese 175 mL
  Paprika to taste  
  • Preheat broiler
  • Baking sheet, ungreased

Instructions

Step 1
Split muffins in half and toast.

Step 2
Combine salmon, mayonnaise, onion, lemon juice, curry powder and pepper. Spread on muffin halves; top with green pepper and cheese. Sprinkle with paprika. Place on ungreased baking sheet. Broil for about 3 minutes or just until cheese melts.

Tips

For a change, try making this with Dilly Bread instead of the English muffins.
