Greek Chicken

Makes 6 servings

This one-pan dish is great way to prepare a quick, flavor-filled Greek meal.

Ingredients

1 1/2 lbs boneless skinless chicken breasts, cut into 1-inch (2.5 cm) cubes 750 g
cloves garlic, minced
plum (Roma) tomatoes, chopped
1 cup chopped onion 250 mL 250 mL
1 cup chopped red bell pepper 250 mL
3/4 cup crumbled feta cheese 175 mL
1/2 cup freshly squeezed lemon juice, divided 125 mL
1 1/2 tbsp dried oregano 22 mL
1 1/2 tbsp dried basil 22 mL
2 tbsp canola oil 30 mL
1/2 cup pitted kalamata olive 125 mL
1/4 cup chopped fresh basil 60 mL
Preheat oven to 375°F (190°C)
 
13- by 9-inch (33 by 23 cm) glass baking dish
 
Serve over rice or with pita bread for dipping.

Instructions

Step 1
In a large bowl, combine chicken, garlic, tomatoes, onion, red pepper, cheese, 1/3 cup (75 mL) of the lemon juice, oregano, basil and oil, stirring well to coat chicken. Spread in prepared baking dish and cover with foil.

Step 2
Bake in preheated oven for 30 minutes. Stir and replace foil. Bake for 20 to 30 minutes or until chicken is no longer pink inside. Stir in the remaining lemon juice, olives and basil.

Tips

Cut the chicken into uniform pieces to ensure it cooks evenly. 
Remove the seeds from the tomatoes if you wish.

Variation
Add a sprig of rosemary and a few hot pepper flakes to the chicken mixture before baking. Remove the rosemary before serving.

Many of the herbs used in traditional Greek cuisine are grown in abundance here in Canada and are easy to grow at home, either on the windowsill in your kitchen or in outdoor herb gardens. Basil, oregano, thyme and rosemary are commonly used in dishes such as souvlaki, tzatziki and roasted potatoes.
