Whole Wheat Pasta with Rapini, Grape Tomatoes and Mushrooms

This recipe is a weeknight blessing, as it takes only 15 minutes from start to finish.


2 cups short-cut whole wheat pasta (such as rotini or penne)
head rapini (broccoli raab, or rape), rimmed and chopped into 3-inch
2 tbsp extra-virgin olive oil 25 mL
green onions, finely chopped
2 cups sliced mushrooms 500 mL
1 cup grape tomatoes, halved 250 mL
1/4 cup freshly grated Parmesan cheese 50 mL
2 tbsp chopped fresh basil, chives or parsley (optional) 25 mL
Add more protein by topping with strips of grilled pork, steak or chicken. For a vegetarian alternative, top with red kidney beans.


Step 1
Cook pasta according to package directions. When pasta is 3 minutes from being cooked, add rapini. Cook until pasta is al dente (tender to the bite). Drain.

Step 2
Meanwhile, in a large skillet, heat olive oil over medium-high heat. Sauté green onions and mushrooms for 4 minutes. Stir in pasta and rapini; cook, stirring constantly, to reheat pasta. Stir in tomatoes.

Step 3
Serve sprinkled with Parmesan and basil, if using.


There is no sauce for this pasta. If you prefer a saucy dish, add the tomatoes earlier, with the mushrooms, and cook to release their juices.
