Cinnamon Oatmeal Breakfast Pudding

Ingredients

2 cups water 500 ml
1/4 tsp salt 1 ml
eggs
1/4 cup milk (1%) 60 ml
1/2 tsp ground cinnamon 2.5 ml
1/2 tsp vanilla extract 2.5 ml
1 1/4 cups quick cooking oats (not instant) 300 ml
1 1/3 cups milk (1%) 315 ml
1/4 cup dried cranberries or raisins (optional) 60 ml
4 tsp granulated sugar 20 ml

Instructions

Step 1
Bring water and salt to boil in medium saucepan over high heat. Whisk eggs, 1/4 cup (50 mL) milk, cinnamon and vanilla in medium bowl; stir into boiling water. Reduce heat to medium-low. Stir in oats. Simmer until desired consistency, about 5 to 6 minutes, stirring occasionally.

Step 2
Spoon into four bowls. Top each serving with 1/3 cup (75 mL) milk, 1 tbsp (15 mL) cranberries and 1 tsp (5 mL) sugar.
