Gouda Wafers

Makes 36 wafers

These homemade crackers are snappy on their own as nibblers or provide the perfect contrast for creamy soups or chunky chowders.

Ingredients

1/2 cup whole wheat flour 125 mL
1/4 cup white rice flour 60 mL
1/2 tsp baking powder 2 mL
1/4 tsp celery salt or salt 1 mL
1/2 cup shredded medium or aged Gouda cheese 125 mL
1 tbsp margarine 15 mL
2 tbsp sesame seeds 30 mL
3 to 4 tbsp ice water 45 to 60 mL

Instructions

Step 1
In a bowl, combine whole wheat flour, rice flour, baking powder and celery. Using a pastry blender or two knives, cut in cheese and margarine until mixture resembles fine crumbs. Stir in sesame seeds. Gradually add water, mixing with a fork to form a stiff dough. Form into a ball.

Step 2
On a lightly floured work surface, roll out dough to a thickness of 1⁄8 inch (3 mm). Cut into 2-inch (5 cm) squares. Place on prepared baking sheet.

Step 3
Bake in preheated oven for 8 to 10 minutes or until very lightly browned. Transfer wafers to a wire rack and let cool for 2 hours. Store in an airtight container at room temperature.
