Spicy Red Lentil and Havarti Soup

This is a delicious way to boost your bone health. Thanks to the milk and cheese, each serving deliv-ers over a third of your daily calcium needs! As many Canadians are not meeting calcium require-ments, your bones will thank you for including this recipe in your regular recipe repertoire.

Ingredients

1 1/2 tbsp butter 25 mL
2 tsp curry powder 10 mL
1 onion, chopped
2 cups diced carrots 500 mL
1 cup celery 250 mL
1 cup diced peeled potatoes 250 mL
3/4 cup dried lentils, red or orange, rinched 180 mL
1 cup chicken broth 250 mL
3 cups milk 750 mL
5 oz jalapeño-flavoured Havarti, cubed 150 g
2 tbsp chopped fresh cilantro 30 mL

Instructions

Step 1
In a large pot, melt butter over medium-high heat. Sauté curry, carrots, potatoes, celery and onions, until onions are softened.

Step 2
Add lentils, broth, milk. Bring to a boil, stirring occasionally. Reduce heat to low and simmer cov-ered until lentils are soft, 30-40 minutes.

Step 3
Purée soup in blender until smooth. Adjust seasoning. Serve garnished with the Havarti and cori-ander
