Gib’s Gourmet Muffins

Makes 16 muffins

These tasty muffins replace eggs with egg whites, and sugar with honey and molasses, for an interesting version of a classic bran muffin. Raisins and unsweetened pineapple make these muffins particularly moist and fruity.

Ingredients

1 1/2 cups whole-wheat flour 375 mL
2 cups natural wheat bran 500 mL
1 1/2 tsp baking powder 7 mL
1/4 tsp baking soda 1 mL
1/4 tsp ground nutmeg 1 mL
1/4 tsp ground cinnamon 1 mL
1 cup skim milk 250 mL
egg whites, lightly beaten
1⁄2 cup safflower oil 125 mL
1⁄2 cup liquid honey 125 mL
1⁄2 cup molasses 125 mL
2 cups raisins 500 mL
1 cup crushed unsweetened pineapple, well drained 250 mL
  • Preheat oven to 350°F (180°C)
  • Two 8-cup muffin tins, greased or paper-lined

Instructions

Step 1
In a large bowl, combine flour, bran, baking powder, baking soda, nutmeg and cinnamon.

Step 2
In another bowl, combine milk, egg whites, oil, honey and molasses. Stir in raisins and pineapple. Add to dry ingredients, stirring just until moistened; do not overmix.

Step 3
Spoon into greased or paper-lined muffin cups, filling three-quarters full. Bake in preheated oven for 20 to 25 minutes or until tops of muffins spring back when lightly touched.

Tips

Often older recipes specify that molasses should be non-sulfured. Due to changes in the manufacturing process, all molasses now fits that description. This addresses concerns about the presence of sulfites, which cause allergic reactions in some people.

DIETITIAN’S MESSAGE
Serve these muffins with a glass of orange juice since they contain molasses, a by-product of sugar manufacturing. Molasses provides some iron, and adding orange juice aids in the absorption of this mineral.
