Lentil Stuffed Mushrooms

Ingredients

12-16 medium mushrooms 12-16
1/4 cup butter or margarine 60 ml
1/4 cup onions, finely chopped 60 ml
1/4 tsp salt 1 ml
1/8 tsp black pepper, freshly ground 0.5 ml
1/2 cup cooked green lentils 125 ml
1/2 cup Parmesan cheese, grated (or cheddar cheese) 125 ml
1/2 cup dry plain bread crumbs 125 ml

Instructions

Step 1
Preheat oven to 350° F (180° C).

Step 2
Remove stems from mushrooms. Chop stems and set aside. Arrange caps in an oiled baking dish.

Step 3
In a frying pan, stir together butter, chopped stems, onion, salt and pepper. Cook until onions are clear and soft.

Step 4
Stir in lentils, cheese, and bread crumbs. Remove from heat.

Step 5
Stuff caps with the lentil mixture. Bake caps for 10-15 minutes, or broil them for about 5 minutes. Serve hot.
