Avocado and Beet Wrap

Ingredients

multigrain wrap
red beet
60ml feta cheese ¼ cup
  Handful of arugula  
avocado, quartered lengthwise
30ml lemon juice 2 tbsp
15ml sunflower seeds 1 tbsp
  Pinch of sea salt  
  Ground pepper, to taste  

Instructions

Step 1
Purée: Pour water into a pot and bring to boil. Add salt and cook the beet until tender. Cooking time will vary depending on the size of the beet.

Step 2
Once the beet is well cooked, take out of the pot and let cool on a cutting board before peeling.

Step 3
Mix beet with feta cheese in a food processor until smooth and set aside.

Step 4
Directions: Spread beet purée on the wrap.

Step 5
Cut avocado in quarters lengthwise and brush with lemon juice to prevent discolouration.

Step 6
Arrange avocado quarters, sunflower seeds, and arugula on the wrap.

Step 7
Season with salt and pepper to taste before rolling up.
