Lentil Roll-Ups

Makes 12-16 servings

Ingredients

1 cup cooked green lentils 250 ml
2 Tbsp Parmesan cheese, grated 30 ml
1 Tbsp onion, finely chopped 15 ml
1/4 tsp oregano, dry crumbled 1 ml
1/4 tsp thyme, dry crumbled 1 ml
1/8 tsp black pepper, ground 0.5 ml
garlic clove, minced
1 pkg (1 lb) phyllo pastry 1 pkg (500 g)
2 Tbsp canola oil 30 ml

Instructions

Step 1
Preheat oven to 325° F (160° C).

Step 2
In a food processor or blender, purée lentils*. Add cheese, onion, oregano, thyme, pepper and garlic. Mix well.

Step 3
Cut individual phyllo pastry sheets into 6 x 8 inch (15 x 20 cm) pieces. Lightly brush with canola oil.

Step 4
Spread 1 tsp filling along one end of pastry sheet and roll over once. Turn in edges of pastry and roll up to make a cigar shape. Repeat this procedure until all of the filling has been used.

Step 5
Place filled pastry rolls on a non-stick baking sheet. Bake rolls 15-20 minutes, or until golden brown.

Tips

*Lentil Purée: Place cooked or rinsed & drained canned lentils into a food processor. For every 1 cup (250 mL) lentils, add 1/4 cup (60 mL) water. Blend to make a smooth purée with a consistency like canned pumpkin. If needed, add additional water 1 tbsp (15 mL) at a time.
