Creamy Avocado Coleslaw

Makes 4 portions

Ingredients

Clove of garlic, minced
  Juice of 1 lime  
2 tbsp Seasoned rice vinegar 30 ml
1 tsp Sugar 5 ml
1/4 cup Mayonnaise (homemade or store-bought) 60 ml
1/2 Napa cabbage, finely chopped  
2-3 Carrots, julienned  
Zucchini, julienned  
1/4 cup Fresh parsley, chopped 60 ml
  4 green onions, thinly sliced  
  Flesh of 2 avocados, cubed  

Instructions

Step 1
In a small bowl, use a whisk to mix the garlic with the lime juice, rice vinegar, sugar and mayonnaise. Set aside.

Step 2
In a large bowl, mix all remaining ingredients with the vinaigrette. Serve.
