Muesli Lentil Breakfast Strata

Ingredients

1 Tbsp unsalted butter (for baking dish) 15 mL
8cups cubed whole wheat bread 2 L
1 1/2 cup cooked or canned green lentils, drained & rinsed 375 mL
1 1/2 cup diced Gala apples, core removed 375 mL
1 cup dried cranberries 250 mL
1 cup rolled oats (reserve some for topping) 250 mL
1 cup chopped pecans (reserve some for topping) 250 mL
eggs
1 cup 2% milk 250 mL
6 Tbsp honey 90 mL
1 tsp cinnamon 5 mL
1 tsp vanilla 5 mL
1/4 tsp salt 1 mL
1 cup Greek yogurt 250 mL

Instructions

Step 1
PREHEAT the oven to 350°F (180°C) and butter a 9x13 inch (22x33 cm) baking dish.

Step 2
COMBINE bread, lentils, apple, cranberries, rolled oats, and pecans in a large bowl.

Step 3
IN a separate bowl, whisk together eggs, milk, honey, cinnamon, vanilla, and salt.

Step 4
POUR milk mixture over bread mixture and combine thoroughly until the bread is no longer dry. Evenly spread mixture into prepared baking dish and sprinkle with rolled oats and pecans.

Step 5
BAKE for 35-40 minutes, or until cooked in the centre. Allow to cool for 5 minutes.

Step 6
SPOON into bowls and serve with a dollop of your favourite yogurt.
