Healthy Cheese ’n’ Herb Bread

Makes 10 servings

This is a bread that Marg’s family particularly enjoys. For many years, she has served it as an accompaniment to brunch or a salad supper.

Ingredients

2 cups all-purpose flour 500 mL
1 cup whole-wheat flour 250 mL
1/2 cup rolled oats 125 mL
1 tbsp granulated sugar 15 mL
2 tsp baking powder 10 mL
1/2 tsp baking soda 2 mL
1 tsp dried basil 5 mL
1/2 tsp dried oregano 2 mL
1/2 tsp salt 2 mL
1/4 cup cold butter or margarine 50 mL
1 cup shredded Swiss cheese 250 mL
egg
1 cup buttermilk 250 mL
2 tbsp sesame seeds 25 mL
  • Preheat oven to 400°F (200°C)
  • 8-inch (1.2 L) round pan, nonstick or lightly greased

Instructions

Step 1
In a medium bowl, combine flours, oats, sugar, baking powder, baking soda, herbs and salt. Using a pantry blender, cut in butter until mixture resembles fine crumbs. Stir in cheese.

Step 2
Beat together egg and buttermilk; add to butter mixture, stirring with fork to make a soft moist dough. Place dough in a nonstick or lightly greased 8-inch (1.2 L) round pan. Sprinkle with sesame seeds. Bake in preheated oven for 25 to 30 minutes or until tester inserted in center comes out clean. Cut into 10 wedges to serve.

Tips

If you’re out of sesame seeds, sprinkle this loaf with chopped walnuts before baking.
