Makes 2 pizzas

Ingredients

whole wheat English muffin
2 tbsp sodium reduced pasta or pizza sauce 30 mL
¼ cup grated part skim mozzarella cheese 60 mL
small green pitted olives, cut in half
half red bell pepper, sliced half
¼ cup grated carrots 60 mL
Pizza is fun for dinner and even more fun as a snack. It doesn’t take long to make and you can add your favourite toppings to make it different every time.

Instructions

Step 1
Split English muffin in half and place on small baking pan. Spread each with sauce.

Step 2
Sprinkle each with cheese and place 2 olive halves on each muffin for eyes. Use 1 red pepper slice on each for a mouth.

Step 3
Place in 350 ºF (180 ºC) toaster oven or oven for about 5 minutes or until cheese is melted and English muffin is crispy.

Step 4
Place each on a plate and sprinkle top with carrots for hair and serve each with remaining red peppers.

Tips

Try using other vegetables for eyes such as small grape tomatoes, carrot or zucchini slices. You can add the eyes after its done cooking and use cucumber slices.
