Okanagan Valley fruit salad

Ingredients

1/2 honeydew melon 1/2
apples, sliced
pears, sliced
peaches, sliced
1 1/2 cup pitted cherries, halved 375 mL
plums, quartered
apricots, quartered
2 tbsp honey 25 mL
1/4 cup apple juice 60 mL
2 tsp fresh tarragon, chopped 10 mL
3 oz Canadian Bocconcini, quartered 90 g

Instructions

Step 1
Using a melon baller, scoop out balls from melon.

Step 2
In a large bowl, mix fruit, honey, apple juice and tarragon.

Step 3
Add Bocconcini and toss gently.

Step 4
Let flavours mingle for a few minutes, then serve.
