Spicy Grilled Cheese

Ingredients

½  red bell pepper, finely chopped ½ 
green onions, thinly sliced
1 tbsp chopped fresh cilantro 15 mL
½ tsp chili powder 2 mL
Pinch cayenne powder Pinch
4 slices whole grain bread 4 slices
slices light Swiss cheese 80 g
1½ tsp canola oil 7 mL
Kids of all ages love grilled cheese sandwiches for lunch.
Try serving it with a tangy bean salad for lunch.

Instructions

Step 1
In a small bowl, stir together pepper, onions, cilantro, chili powder and cayenne pepper. Spread evenly on 2 bread slices.

Step 2
Top with cheese and cover with remaining bread slices. Brush one side with some of the oil.

Step 3
Place sandwiches in large nonstick skillet, oiled side down and cook over medium heat for about 3 minutes or until golden.

Step 4
Flip sandwich over and cook for about 3 minutes or until golden and cheese is melted.

Tips

Use your favourite cheese to make it your own.
Try different peppers to change the flavour. For a spicier sandwich, try using jalapeno peppers.
