Blueberry & Dark Chocolate Bread Pudding

Ingredients

eggs
3/4 cup brown sugar 175 ml
2 tsp vanilla 10 ml
4 cups milk 1 L
5 cups cubes of dried wholegrain bread 1.25 L
1 cup fresh or thawed frozen blueberries 250 ml
3 oz 70% cacao chocolate, chopped coarsely 90 g
1/3 cup almonds, chopped coarsely 80 ml

Instructions

Step 1
Preheat oven to 350 °F (180 °C). In a large bowl, beat together eggs, brown sugar and vanilla for 2 minutes. Stir in milk. Add bread. Mix and let sit 45 minutes.

Step 2
Add blueberries. Pour mixture into 8" (20 cm) square mold. Sprinkle with chocolate and almonds, pressing pieces lightly into surface. Bake 55 to 60 minutes. Serve warm or chilled.
