Chilled Avocado Soup

Ingredients

1 cup plain yogurt 250 ml
3 cup unsweetened almond beverage 750 ml
ripe avocados, halved, pitted and peeled
2 tbsp sweet onions finely chopped 30 ml
Pinch ground pink peppercorns, for garnish Pinch

Instructions

Step 1
In a blender, mix yogurt, almond beverage and onions until smooth, about 30 seconds.

Step 2
Add avocado and blend until smooth, 1 to 2 minutes.

Step 3
Evenly divide soup among four bowls. Sprinkle with ground peppercorns and serve.
