Watermelon and Avocado Salad with Spinach and Feta

Makes 4 portions

Ingredients

  Juice of ½ lemon  
1/3 cup Olive oil 80 ml
4 cups Watermelon with rind removed, cubed 1 L
1/4 Red onion, sliced  
Flesh of avocados, cubed  
4 cups Baby spinach leaves 1 L
1/2 cup Feta cheese, crumbled 125 ml
2 tbsp Fresh mint, coarsely chopped 30 ml

Instructions

Step 1
In a small bowl, mix the lemon juice with the olive oil.

Step 2
In a large bowl, mix all of the ingredients for the salad together and serve.
