Broccoli & Lentil Salad with Turmeric Yogurt Dressing

Ingredients

1/4 cup Greek yogurt, 2% MF 60 mL
1/4 cup mayonnaise 60 mL
2 tsp whole grain mustard 10 mL
2 tsp honey 10 mL
1 tsp white wine vinegar 5 mL
1/4 tsp ground turmeric 1 mL
  to taste, salt and pepper  
  SALAD  
3 cups broccoli florets (approx. 1 head of broccoli) 750 mL
1 cup halved cherry tomatoes 250 mL
1 cup cooked green lentils 250 mL
1/2 cup finely chopped red onion 125 mL
1/2 cup sliced, toasted almonds (reserve some for garnish) 125 mL

Instructions

Step 1
Whisk dressing ingredients together in a small bowl. Season with salt and pepper and reserve.

Step 2
Combine salad ingredients together. Toss dressing with the salad, season with salt and pepper, and garnish with toasted almonds.
