Citrusy Chicken Salad With Feta

This simple but tasty recipe packs a serious protein punch. Pair with a glass of milk and a hearty whole grain bun and you’ve got an easy, well balanced meal that will keep hunger at bay.

Ingredients

1 1/2 cups soybeans (edamame) shelled 375 mL
2 cups cooked chicken shredded 500 mL
1/4 cup sun-dried tomatoes minced 60 mL
2-3 clementines peeled and separated into segments 2-3
2 tbsp olive oil 30 mL
1/4 cup orange juice 60 mL
1 cup Canadian feta diced 250 mL
  freshly ground pepper  
5 cups assorted lettuce 1.25 L

Instructions

Step 1
Cook soybeans according to instructions on packaging. Drain and cool under running water.

Step 2
In a large bowl, mix together all ingredients except lettuce. Adjust seasoning.

Step 3
Add lettuce, toss and serve immediately.
