Garlic Mashed Potatoes

Makes 6 servings

Eight cloves of garlic may seem overpowering, but when roasted, garlic assumes a mellow and gentle flavor, which complements the subtle taste of the potatoes. The herbs add additional flavor to this tasty mixture.

Ingredients

cloves garlic
1/2 tsp olive oil 2 mL
medium potatoes (russet, Yukon Gold)
1/2 cup 2% evaporated milk 125 mL
2 tsp chopped fresh parsley 10 mL
1 tsp chopped fresh chives (or green onions) 5 mL
1/4 tsp crumbled dried tarragon 1 mL
1/2 tsp salt 2 mL
1/4 tsp white pepper 1 mL
  • Preheat oven to 350°F (180°C) 
  • Small ovenproof dish

Instructions

Step 1
In a small ovenproof dish, toss garlic with olive oil; roast in preheated oven for 20 to 25 minutes or until lightly browned.

Step 2
Peel potatoes; boil or microwave until tender. Mash potatoes with garlic. Add milk, parsley, chives, tarragon, salt and pepper; mash until soft and creamy. (Add more milk if necessary for desired consistency.)

Tips

If desired, use 1 tsp (5 mL) fresh tarragon instead of the dried.
When mashing potatoes, be sure to use a potato masher or a ricer, not a food processor. A food processor quickly over processes the potatoes, breaking down their starch content and producing an unappetizing, gluey result.
