Quinoa Greek Salad

A hearty make-ahead salad ready for lunch.

Ingredients

1 cup 1% milk 250 mL
1/2 cup water 125 mL
3/4 tsp dried oregano 3 mL
1/4 tsp pepper 1 mL
1 cup quinoa, rinsed 250 mL
Grated zest of one lemon
2 tbsp lemon juice 25 mL
tomatoes, chopped
sweet pepper, (any colour), chopped
English cucumber, chopped
1/2 cup diced red onion 125 mL
1 cup drained, rinsed, canned red beans 250 mL
3/4 cup diced Canadian Feta cheese 180 mL

Instructions

Step 1
In a deep saucepan, combine milk, water, oregano and pepper. Bring to boil over medium heat. Stir in quinoa. Reduce heat to low, cover and simmer for 20 minutes. Let stand covered 5 minutes. Transfer to bowl. Stir in lemon zest with fork; let cool. Stir in remaining ingredients. Serve or refrigerate up to 1 day.
