Chewy Ginger Pecan Cookies

Kids will like this soft, yummy cookie that is easy to make. Be sure to get the kids in the kitchen and help measure and roll the cookies before they bake.

Ingredients

1 cup Ground large flake oats 250 mL
1 cup Whole wheat flour 250 mL
2 Tbsp Ground flax 30 mL
1 Tbsp Hemp hearts 15 mL
1 Tbsp Chia seeds 15 mL
1 1/2 Tbsp Ground ginger 22 mL
1 tsp Kosher salt 5 mL
3/4 cup Butter 175 mL
1 cup Granulated sugar 250 mL
Egg  
Egg yolk  
1/4 cup Fancy molasses 60 mL
2/3 cup Chopped pecans 150 mL
2/3 cup Sweetened shredded coconut 150 mL

Instructions

Step 1
In a bowl, whisk together oats, flour, flax, hemp, chia, ginger and salt; set aside.

Step 2
In a large bowl, beat together oil and sugar until fluffy. Beat in egg and egg yolk. Beat in molasses. In three additions add flour mixture. Gently stir in pecans and coconut.

Step 3
Roll heaping tablespoonfuls of dough and place onto parchment paper lined baking sheet. Bake in preheated 350°F (180°C) oven for about 10 minutes or until set.

Step 4
Repeat with remaining dough.
