Marinated Bocconcini & Vegetables

Ingredients

1 Container Canadian Bocconcini 200 g
2 tbsp lime juice 30 ml
2 tbsp cilantro, chopped 30 ml
1/4 tsp sea salt 1 ml
cucumber, thinly sliced
tomatoes, thinly sliced
2 tsp olive oil 10 ml
  Salt and freshly ground pepper  
1 cup radish microgreens 250 ml
  Sriracha hot sauce, to taste (optional)  

Instructions

Step 1
Cut Bocconcini into quarters. In a bowl, mix lime juice, cilantro and salt. Add Bocconcini and marinate for at least 1 hour (maximum 24 hours).

Step 2
Divide cucumber and tomato slices among plates.

Step 3
Add the marinated Bocconcini and drizzle with a little of the marinade and olive oil. Season with salt and pepper.

Step 4
Garnish with radish microgreens and a few drops of Sriracha sauce, if desired.

Tips

Cheese alternatives: Canadian Burrata, Fresh Mozzarella.
