Thai Curry Turkey

Ingredients

1/3 cup water 75 mL
1 tbsp sodium reduced soy sauce 15 mL
1 tbsp liquid honey 15 mL
1 tbsp chopped fresh parsley 15 mL
1 ½ tsp curry powder 7 mL
1 tsp sesame oil 5 mL
clove garlic, minced
½ tsp cornstarch 2 mL
2 tsp canola oil 10 mL
green onions, chopped
red pepper, sliced
3 cups shredded or chopped cooked turkey 750 mL
Here is a great recipe to use up leftover turkey, chicken or even beef. Serve over noodles or rice and send in a thermos for a hot lunch. 

Instructions

Step 1
In small bowl, whisk together water, soy sauce, honey, parsley, curry powder, sesame oil, garlic, and cornstarch; set aside.

Step 2
In a non-stick skillet heat oil over medium heat and cook onions and pepper for about 3 minutes or until softened.

Step 3
Add meat and sauce and stir to coat and cook for about 3 minutes or until turkey is heated through.
