Applesauce Snack Cakes

Makes 16 cupcakes

These muffin-like cakes are a treat for kids’ lunch boxes or for breakfast.

Ingredients

1/2 cup butter or margarine 125 mL
1 1/2 cups granulated sugar 375 mL
eggs
1 tsp vanilla 5 mL
2 cups all-purpose flour 500 mL
1 tbsp baking powder 15 mL
1 tsp baking soda 5 mL
1 1/2 tsp ground cinnamon 7 mL
1 tsp ground allspice 5 mL
1/2 tsp ground cloves 2 mL
2 cups unsweetened applesauce 500 mL
  • Preheat oven to 400°F (200°C)
  • Two 8-cup muffin tins, greased or paper-lined

Instructions

Step 1
In a large bowl, cream butter and sugar. Beat in eggs and vanilla until light and fluffy.

Step 2
Sift together flour, baking powder, baking soda and spices. Add to creamed mixture alternately with applesauce, mixing well after each addition.

Step 3
Spoon into prepared muffin cups, filling each about two-thirds full. Bake in preheated oven for about 20 minutes or until firm to the touch.

Tips

Make your own applesauce when apples are plentiful and freeze in 2-cup (500 mL) portions.
