Pasta and Edamame Salad

Makes a satisfying dinner salad that’s great for tomorrow’s bagged lunch.

Ingredients

3 cups frozen edamame or green peas, defrosted 750 ml
3 cups cooked pasta, (e.g., orecchiette or mini-shell) 750 ml
2 1/2 tbsp olive oil 37 ml
1 tbsp white balsamic or white wine vinegar 15 ml
  Zest of 1 lemon, finely grated  
stalks of celery, diced finely
7 oz cherry tomatoes, quartered 200 g
3 oz regular Havarti cheese or medium Cheddar cheese, diced finely 90 g
1/3 cup fresh basil, sliced finely on the diagonal 75 ml
  Chili powder, to taste (optional)  

Instructions

Step 1
In a large bowl, mix all ingredients together gently.
