Chicken Salad Sandwich – Two Ways

Ingredients

1 cup cooked diced or shredded chicken 250 mL
1/2 half a tomato, seeded and finely chopped 1/2
3 tbsp finely chopped onion, shallot or green onion 45 mL
1/4 cup chickpea hummus or soft cream cheese 60 mL
1 tbsp chopped fresh cilantro (optional) 15 mL
  a pinch of each salt and pepper  
slices whole grain bread
lettuce leaves
This is a great way to use up leftover chicken from last night’s dinner. For variety, try this sandwich with different flavours of hummus.  You can also use cream cheese instead of the hummus.
 
 

Instructions

Step 1
In a bowl, stir together chicken, tomato, onion, 2 tbsp (30 mL) of the hummus, cilantro (if using), salt and pepper.

Step 2
Place bread on work surface and spread each with remaining hummus and top with lettuce.

Step 3
Divide chicken mixture among bread and serve.

Tips

If you want a bit more zip to your sandwich, add 1 tbsp (15 mL) lemon juice to the chicken mixture.
