Reena’s Yummy Greek Salad

Makes 8 cups (2 L)

Ingredients

whole wheat pitas, cut into 8 wedges each
3 cups grape tomatoes, cut in half lengthwise 750 mL
mini cucumbers, cut into 1/2 inch (1 cm) slices
1 cup crumbled light feta cheese 250 mL
     
  Dressing  
¼ cup extra virgin olive oil 60 mL
2 tbsp red wine vinegar 30 mL
cloves garlic, minced
1 tsp dried oregano leaves 5 mL
pinch salt pinch
pinch freshly ground black pepper pinch
Fresh vegetables are always a great option for lunch. With the addition of crisp pita and feta cheese this makes a vibrant and refreshing option for kids.

Instructions

Step 1
Place pita wedges on baking sheet and bake in preheated 400 F (200 C) oven for about 5 minutes or until golden and crisp. Let cool.

Step 2
Dressing: In a small bowl, whisk together oil, vinegar, garlic, oregano, salt and pepper.

Step 3
In a large bowl, stir together grape tomatoes, cucumber and feta. Add toasted pita and drizzle with dressing. Toss to combine. Let stand 5 minutes before serving for flavours to develop.
