Peach, Grilled Corn, Avocado and Feta Salad

Makes 4 portions

Ingredients

2 tbsp Sherry vinegar 30 ml
1 tbsp Honey 15 ml
1/4 cup Olive oil 30 ml
2 cups Baby spinach 500 ml
1/2 Radicchio, chopped  
2 cups Lettuce 500 ml
  Kernels from one cob of grilled corn  
Pitted peaches, in 8 quarters  
1/2 Red onion, thinly sliced  
  Flesh of 2 avocados, cubed  
1/2 cup Feta, crumbled 125 ml

Instructions

Step 1
In a small bowl, mix the vinegar with the honey and olive oil. Set aside.

Step 2
Garnish a plate with baby spinach, chopped radicchio and lettuce. Add the corn, quartered peaches, sliced onion, cubed avocado and feta.

Step 3
Serve with the honey and sherry vinegar dressing.
