Spiced Squash and Carrot Loaf with Gouda

This tasty bread prepared with carrots, zucchini, Canadian Ricotta and Gouda is a nourishing family pleaser that can also be made in to muffins. Original and infallible, this recipe will brighten any autumn breakfast table. And besides, our dietitians recommend it.

Ingredients

1 cup whole wheat flour 250 mL
1 cup unbleached all-purpose flour 250 mL
1/4 cup wheat bran, oat bran or wheat bran cereal 60 mL
1 tbsp baking powder 15 mL
1/2 tsp baking soda 2 mL
1/4 tsp ground cinnamon 1 mL
1/2 cup grated carrots 125 mL
1/2 cup grated butternut squash 125 mL
1/2 cup grated zucchini 125 mL
1 cup Canadian Aged Gouda grated or cubed 250 mL
1/4 cup soft butter 60 mL
1/3 cup sugar 80 mL

1 1/4 cup Canadian Ricotta 310 mL

Instructions

Step 1
Preheat oven to 350oF (180oC). Grease and flour large bread pan, or line with parchment paper.

Step 2
In large bowl, mix dry ingredients.

Step 3
Add vegetables and 2/3 cup (160 ml) of Gouda. Make a well in middle of bowl.

Step 4
In another bowl, beat butter along with sugar.

Step 5
Add eggs one at a time, beating well after each addition.

Step 6
Incorporate Ricotta and pour liquid ingredients into well of dry ingredients. Stir with a fork until a smooth consistency is reached.

Step 7
Spread out in bread pan, add remaining Gouda on top, and bake in centre of oven 1 hr. and 15 min. or until bread is golden and toothpick inserted in its middle comes out clean.

Tips

You can also use Canadian Swiss, Cheddar or Provolone.
