Mango Chicken Wraps

Makes 4 servings

This is a favorite on grilled sandwich night.

Ingredients

1/4 cup light mayonnaise 50 mL
1/4 cup mango chutney 50 mL
10-inch (25 cm) multigrain tortillas
8 oz cooked chicken, cut into strips 250 g
mango, sliced
1/4 red onion, cut into thin rings 1/4
4 cups loosely packed mesclun mix 1 L

Instructions

Step 1
In a small bowl, combine mayonnaise and chutney.

Step 2
Spread 2 tbsp (25 mL) of the mayonnaise mixture on each tortilla. On the bottom third of each tortilla, place one-quarter of each of the chicken strips, mango slices, red onion rings and mesclun mix. Fold in the 2 sides, then fold the bottom of the wrap up over the filling and roll until tight.

Tips

Serve cold or heat on a preheated sandwich grill to crisp up the tortilla.
This is also good grilled on sliced bread or panini.
