French Toast

Makes 6 servings

Here’s a lower-fat, higher- fiber version of an old favorite.

Ingredients

egg whites
2 tbsp skim milk 25 mL
1/2 tsp vanilla 2 mL
pinch ground nutmeg or cinnamon pinch
slices whole-wheat bread

Instructions

Step 1
Beat together egg whites, milk, vanilla and nutmeg until frothy. Pour into large flat dish; dip both sides of bread slices into mixture.

Step 2
In a large nonstick or lightly buttered skillet, cook bread over medium heat until brown on 1 side. Flip and cook other side.

Step 3
Serve immediately.

Tips

Both the whites and the yolks of eggs provide such valuable nutrients as vitamin A, magnesium, iron and riboflavin, in addition to protein.

Dietitian's Message
