Grilled Dijon Lamb Chops

Makes 4 servings

Here’s a quick, simple and delicious way to prepare succulent lamb chops.

Ingredients

cloves garlic, minced
1 tbsp dried thyme 15 mL
1 tsp freshly ground black pepper 5 mL
2 tbsp Dijon mustard 30 mL
1 tsp canola oil 5 mL
lamb chops (each about 4 oz/125 g)
  • Preheat greased barbecue grill to medium-high
 
 

Instructions

Step 1
In a small bowl, combine garlic, thyme, pepper, mustard and oil. Rub evenly over both sides of lamb chops.

Step 2
Place lamb chops on preheated grill, close the lid and grill, turning once, for 4 to 5 minutes per side for medium or to desired doneness.

Tips

Trim all visible fat from the lamb chops to reduce the amount of fat in your dish and to minimize spatter when cooking.

Variation
Use 4 bone-in pork loin chops instead of the lamb chops.
Lamb is the meat of sheep that are under one year of age. It is usually quite tender and works well with most cooking methods. Mutton, on the other hand, is sheep slaughtered after two years of age. It often has a strong aroma during cooking.
